Vendace is the smallest member of the salmonid family. It is an excellent food fish and, like other salmonids, rich in healthy omega fatty acids. These small, delicate fillets are perfect fried in butter or deep-fried.
Vendace fillet is part of how we use the whole fish: the roe becomes Kalix Löjrom, the fish becomes fillets – and we also make boquerones from vendace, an innovation highlighted when we received the Swedish Seafood Award (Sjömatspriset) in 2025.
